1 tbsp. olive oil
1 1/4 lb. skinless, boneless chicken thighs
1 tbsp. curry powder
1 1/2 c. roasted-garlic pasta sauce
can garbanzo beans
3/4 c. water
1/2 c. Peanut Butter
2 tbsp. chopped fresh cilantro
  1. In 12-inch skillet heat oil on medium-high. Add chicken and cook for 8 minutes, stirring often. Add curry and cook for 1 minute, stirring. Stir in sauce, beans, water, and peanut butter and heat until boiling. Cover; simmer on low for 5 minutes. Stir in cilantro and spoon over rice to serve.
