Oven Baked Nacho Recipe
Tuesdays are taco night at our house, and last night, inspired by all the Super Bowl recipes flooding the web last week, I made nachos instead. I followed instructions from Simply Recipes for a fun and family-pleasing dinner that took just minutes to throw together. All I needed was a bag of chips, some shredded cheese and a can of refried beans.
You could use any kind of leftover cooked chicken, beef or pork you have in the fridge, but I didn't have anything so I used the beans. I also used preshedded cheese and thick round tortilla chips.
I spread about 1/3 the bag of chips in a shallow baking dish (about 2 layers), then dolloped in small spoonfuls about 1/2 the can of refried beans. I spread shredded cheese over the top, then baked in a 350F oven for 10 minutes. Served with guacamole, sour cream, salsa and tomatoes.
Everyone liked this, although it was a bit too salty for my taste. Now that I look at the picture above with the bag of chips, I see it says "Salted" in big letters across the top. Buying "lightly salted" chips and low-salt refried beans would fix that problem. Basically having a big plate of chips for dinner should've been more fun for the kids, but I think they actually would've preferred to just have tacos. I'll probably stick to tacos for Tuesday in the future.
